3 Ways to Enjoy Sweet Potatoes
Bake a sweet potato for 45 mins on 200ºC/400ºF/gas. I have never been a fan of microwaved potatoes. Top with tzatziki, hummus or fresh guacamole and a handful of mixed leaves for a delicious vegan lunch.
Be honest who doesn’t love French fries. Cut sweet potatoes into fries and toss them in a roasting tray with a grind of salt, pepper, and a little paprika. Spray with a little olive oil and bake in the oven for 35 to 40 minutes at 200ºC/400ºF/gas occasionally turning until golden
Roast sweet potato chunks and diced carrots in a little olive oil. Spray oil is amazing and avoids loading on extra calories too. While they are roasting, fry a chopped onion and garlic in a a couple of sprays of olive oil until softened. Add a litre of good quality vegetable stock and a few fresh thyme leaves. Lastly add the roasted vegetables and whizz up with a hand blender for a delicious soup. Garnish with toasted pumpkin seeds and sprigs of fresh thyme, season to taste and serve piping hot.
