It’s time to change up your regular potato for something a little sweeter. Unlike their starchy friends, this bright orange root vegetable counts towards one of your five daily portions of fruit and vegetables. This versatile root is deliciously roasted, puréed, steamed or baked, then added to stews, casseroles, soups or even a delicious twist to a healthy salad.
For a Tasty Alternative to your Normal Fries
Cut a sweet potato into fries, spray them with a little olive oil and season with a little Himalayan rock salt and ground black pepper. I like to toss them into the air fryer, they only take about 15 minutes. Just remember to shake them a few times during cooking to ensure they are evenly cooked and super crispy. Alternatively bake in the oven for 35 to 40 minutes at 200ºC, occasionally turning until golden.
Spray sweet potato chunks with a little olive oil in the oven for 35 to 40 minutes at 200ºC, seasoned with a little Himalayan rock salt and ground black pepper. While they are roasting, fry a chopped onion and garlic until softened. Add a litre of good quality vegetable stock and a few fresh thyme leaves. Lastly, add the roasted sweet potato and whizz up with a hand blender for a delicious soup. Garnish with toasted pumpkin seeds and sprigs of fresh thyme.
