One thing I look forward to on a chilly day is a bowl of healthy, wholesome soup. I love this Cannellini Bean and Potato Soup. Simple to prepare this soup makes a nice lunch, perfect to warm you through during this cold Winter weather.
I make my soup in my Tefal Soup Maker. It’s so quick and easy I would definitely recommend that you invest in one of these. It only takes about twenty minutes from raw vegetables to deliciously hot blended soup.
Serves 2 for a delicious lunch or pack into your flask and take with you to the office.
The Ingredients Serves 2 – (Syn Free)
2 Medium Potatoes Chopped into 1-inch cubes
1 Large Leek – Thickly Sliced
400g Cannellini Beans
1 Vegetable Stock Pot (I use Knorr or Oxo)
1 litre filtered water
A few fresh Thyme Leaves
Salt and Pepper to Season

1. Put all the ingredients in the Tefal Soup Maker, switch on, set to smooth, and that is it!
2. Once the soup is ready, season to taste and serve garnished with a sprinkling of Fresh Thyme leaves and a little freshly ground black pepper.
