Slow-cooked French Onion Soup

This slow-cooked French onion soup is the perfect recipe for a cold winters day. One of the simplest joys that the cold weather brings is coming home to the delicious aroma of a slow-cooked meal.  

Whilst french onion soup can easily be made on the hob, the rich infused flavours from slow cooking the ingredients make this a perfect slow cooker recipe. 

As the portions of this recipe are generous it is ideal for freezing and reusing at a later date. 

As you will know from my previous slow cooker recipes I look at my Crockpot and my assistant chef so whilst I’m working the crockpot looks after the evening meal. 

Ingredients for Slow Cooked French Onion Soup

3lb Onions, Thinly Sliced

3 tablespoons unsalted butter, melted

2 teaspoons brown sugar

Salt & pepper to taste

A bay leaf

1 tablespoon thyme

1 1/2 litres beef stock

2 teaspoons Sherry Vinegar

1 Baguette

9oz grated strong cheese.

Method

  1. Place the onions in a slow cooker, and stir in the butter, brown sugar, salt, thyme and bay leaf. 
  2. Cook on high for 8 hours.
  3. Stir in the beef stock, sherry, and season with salt and pepper. Cover and cook for a further 2 hours.
  4. Discard the bay leaf.
  5. Slice the baguette and place on a baking sheet, toast one side until golden brown.
  6. Flip over the baguette and top with the grated cheese. Place under the grill until the melted cheese starts to bubble,
  7. Decant French Onion Soup into a bowl and top with the baguette and melted cheese.
  8. Serve immediately.
