Well, 2021 certainly hasn’t got off to the best start with us now back in Lockdown! What this means for us Parents is that we are now juggling Home Schooling as well as working from home and trying to keep all those balls in the air. Not an easy task.
It’s easy to feel stressed and pressured and out of control. Trying to be everything to everyone. Let’s face it when we became parents I’m not sure we ever signed up for this extreme situation.
However, as a mother of boys, my children are always looking for the next meal and for me to be organised and take off some of the pressure I rely on my slow cooker.
This Slow-Cooked Tomato Soup recipe is absolutely perfect for lunch. I find lunchtimes one of the most stressful times of the day, as it’s very difficult to prepare food whilst trying to juggle work and homeschooling.
My boys are quite picky and can locate a hidden vegetable from ten paces but they do like the rich and creamy flavour of this soup and it’s so simple to make. By preparing it in the morning, you can just throw in the ingredients and its ready for lunchtime. This recipe is simple, quick, easy and rich in nutrition so definitely a winner for any dinner Table.
Slow-cooked Tomato Soup
Ingredients
2lb 5 oz Tomatoes – roughly chopped
1tsp Basil
3 garlic cloves – peeled and finely chopped
1 Onion – chopped
1 carrot – chopped
3 tbsp Tomato Puree
14fl oz Vegetable Stock
Method
Put all ingredients in the Slow Cooker.
Cover with the lid and cook on high for 4 hours.
Serve with crusty bread and a swirl of Creme Fraiche (optional)
The perfect recipe for anyone short on time, with hungry mouths to feed.
