Shakshuka

If you are looking for something a little different for breakfast, then this delicious syn free Shakshuka ticks all the boxes.  This deliciously healthy dish of poached eggs, in a spicy tomato sauce, is perfect for a lazy weekend breakfast or brunch. Its full of healthy ingredients, quick to make and perfect for these cold mornings. For all you ‘Slimming Worlders’ it’s syn free too.

Shakshuka – The Ingredients – Serves 2 – Syn Free

Spray Oil – I use Frylight.
1 large onion, halved and thinly sliced
A small red and green salad pepper, seeded and thinly sliced
2 garlic clove, thinly sliced
1 teaspoon ground cumin
1 teaspoon sweet paprika
¼ teaspoon cayenne, or to taste
400g can chopped tomatoes
Freshly ground Sea Salt and black pepper.
4 large eggs
Chopped parsley, for serving

Directions

1. To begin preparing the Shakshuka, spray a heavy bottomed pan with frylight and heat over medium-low heat, adding onion, garlic, and bell pepper. Cook gently until very soft, about 5-8 minutes.

2. Pour in the chopped tomatoes, stir in the cumin, paprika, and cayenne; simmer until tomatoes have thickened, about 10 minutes.

3. Make a well for each of the eggs and gently crack eggs into the tomatoes. Season with salt and pepper. Cover the pan with a lid and cook until eggs are just set, 7 to 10 minutes.

4. Sprinkle the Shakshuka with chopped parsley and serve.

Top Tip : I recommend a cast iron le Creuset pan for this recipe, they are an investment, but if you look after them properly they will last forever.
