Cherry Flapjacks Recipe

This Cherry flapjacks recipe is the perfect mid-morning snack to keep your kids powering through the homeschooling. I always know when the boys breakfast is wearing off as their concentration levels take a dip. Therefore this quick and simple snack is a healthy boost.

Whilst I would love to bake daily for my family, working full time does not always allow this. However, the beauty of this recipe is that it’s quick, simple as well as nutritious. So if you are short on time but want to provide an homemade healthy snack then this could be the perfect solution. 

This recipe for cherry flapjacks can also be tweaked to suits your preferences so if cherries are not a favourite then why not substitute them for chocolate, fruit or whatever takes your fancy.

Ingredients for Cherry Flapjacks

250g Butter

250g Soft Brown Sugar

175g Golden Syrup

425g Oats

200g Cherries halved

Method for Cherry Flapjacks

  1. Heat the oven to 180 degrees.
  2. Line a rectangular baking tin with parchment (20x30cm)
  3. Melt the butter, sugar and syrup in a large pan, over medium heat. Once melted, stir in the oats coating them well.
  4. Tip 3/4 of the mix into the tin.
  5. Next, scatter the cherries over the top.
  6. Then tip the remaining mixture over the cherries.
  7. Bake for 30 minutes, then remove and allow to cool before slicing into 12 flapjacks.

This recipe is fairly straightforward so perfect for the kids to help. It also contains store cupboard items so you are likely to already have these in your home already.

One batch will last a couple of days if stored in an airtight container but If your kids are anything like mine, these aren’t going to hang around for long. These Cherry Flapjacks are likely to be much healthier than shop-bought treats and you know the exact level of sugar these contain, unlike some of the shop-bought snacks.
