Homity Pie is a lovely dish using lots of homegrown produce, and very few extra ingredients. Most of the additional items you would be able to find in your store cupboard or village store.
Ingredients
Low calorie cooking spray
340g home grown potatoes , peeled and cubed
225g home grown onions , chopped
225g homegrown leeks, thinly sliced
198g homegrown peas
2 cloves of garlic, finely chopped
Handful of home grown parsley, finely chopped
Handful of home grown Thyme, finely chopped
2 eggs, beaten
85ml vegetable stock
160g cheddar cheese, grated
Salt & pepper
Homity Pie Method:
Preheat oven 220 degrees / gas 7.
In a separate pan boil potatoes for 15-20 minutes , Drain and mash and keep to one side.
Spray large saucepan with cooking spray, fry onions, leeks, peas, for 8 minutes or until softened.
Add the mashed potatoes, garlic, herbs, eggs, stock and half the cheese and combine.
Transfer to an oven proof dish and sprinkle with the remaining cheese
Bake for 20 minutes until the cheese is golden.
Once cooked serve with a side salad, steamed vegetables or my favourite is baked beans.
This is a perfect dish to cook using simple home grown ingredients. To avoid any waste this can be transferred to the fridge once cooled and re heated for another day.
